More on Sheila’s Dream Bar

So I went right to the source and wrote Potbelly’s Sandwich Works to find out more about Sheila’s Dream Bar.

Now you can tell from the pictures that I bought one to carefully look for the coconut that Sara insisted is part of the recipe, but I also wrote the good folks at Potbelly’s to get to the bottom of the wonderful treat.

I also wanted to know who the heck Sheila was!

This is the letter I got back from them:

Hey Rob ~

Thanks for writing. You really do love our Dream Bars! Alright, I’ll tell you everything I know about them. Sheila is our CEO, Bryant Keil’s, wife and she is the originator of this fantastic treat. Yes it does have coconut. Unfortunately I cannot divulge the secrets behind the goodness that make up Shelia’s Dream Bar. She keeps close tabs on that recipe.

    I love Sheila's dream bar!!! I always buy 6 to 8 bars each time I go to Potbelly's. I am lucky if they last me three days. I try to share them with family and friends to show them how great they are but in the end I just can't do it. The closest Potbelly's is one hour away and I usually don't go to that city. I just found out about a new Potbellys that is not too far from where my husband works a couple of times a months!! I couldn't be happier. He suggested that since I am so fanatic about the bars that maybe I could find out how to make them by doing a google search. I didn't think so….I also tried writing the company with the same results. Nothing but a polite response. I found out that they don't even make them in the store but rather send them in sheets. So much for getting a second job at Potbelly's! Well, I just wanted to say that I love them also!! I think I will go eat one now!!

    You know, I was searching for a recipe for my friend Jodi's shower, and she loves Pot belly dream bars………..now I found her, online making this comment. I know she is completely obsessed. I buy these cookies whenever I am anywhere near a potbelly's. Don't get her started on Pizza Papalo's

    I have a label with a list of ingredients from a dream bar. There is no coconut listed as I've seen in other posts except the coconut oil in the shortening. Leaving out the emulsifiers and vitamin b3 and stabilizers, this list (in order of greatest to least quantity) might be cobbled into a match

    Butter, Bleached Wheat Flour, Brown Sugar, Rolled Oats, Semi-Sweet Chocolate Chips, Taffy Apple Fudge: (Evaporated milk, milk, carageenan (thickener – use corn starch?), sugar, corn syrup, shortening, artificial flavor (apple flavor extract can be found online), nonfat dry milk, salt baking powder), Artificial flavors (probably vanilla), Salt, Baking soda

    Time to experiment

    I can't tell you what is in it, but I can tell you that Shelia is one of the best cooks ever! I would go to there house every week, and that dream bar is just the beginning of what she can make! She also makes this Oreo m&m think that is TO DIE FOR!
